What is phytase?
- Phytate is a strong polyanionic chelator that forms insoluble complexes with several divalent cations (such as Ca2, Mg2, Zn2, Cu2, Fe2, Mn2) and proteins & amino acids. It is nearly indigestible for monogastric animals (swine and poultry).
- Phytases(EC 3.1.3.28) decompose phytate, which is the primary storage form of phosphate and inositol in plants (60% of total phosphorus).
